Superfruit Cocktail


Fruit Cocktail was a staplThere are plenty of online videos showing how to deseed a pomegranate, but the easiest way we've found is to simply cut the pomegranate in half, push out the center as much as you can, and hit it with a wooden spoon until the seeds fall out.

Ingredients

  • 1 cup water
  • 1 cup sugar
  • 1 cup lemon juice
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 2 cups pomegranate arils
  • 1/2 cup maraschino cherries (optional)

Preparation

  • 1 In a large sauce pan, combine water and sugar.
  • 2 Bring to a boil; then, reduce heat and simmer until sugar is dissolved.
  • 3 Remove from heat and allow to cool to room temperature; add lemon juice.
  • 4 Combine blueberries, raspberries, and pomegranate arils in a mixing bowl, and pour the lemon simple syrup over it.
  • 5 Refrigerate for approximately two hours.
  • 6 If flavor is too tart, add maraschino cherries for sweetness.
